I roasted some Guatemala coffee to full city (post second crack) yesterday and I really do not like it that dark. I will try to roast it to city roast to see if it improves. The coffee exhibited bitter and sharp after taste and burned taste. If the city roast is not better then it is just due to bad green beans. The other issue I face at this time of year in south Texas is that it is 90+ degrees outside so is harder to control temperature rise in the roaster since I have to roast it outside.
